Loco Moco with Maui Bone Broth Beef Gravy
A hearty Hawaiian comfort food classic featuring a juicy hamburger patty, fluffy rice, rich brown gravy, and a runny fried egg — all enhanced with Maui-made bone broth for that nourishing, umami-loaded twist.
Ingredients
For the Beef Patties:
- 1 lb ground beef (80/20 preferred)
- 1 small onion, finely minced
- 1 clove garlic, minced
- 1 egg
- 2 tbsp panko breadcrumbs
- 1 tbsp Worcestershire sauce
- Salt & black pepper to taste
- Oil or butter for frying
For the Gravy:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups Maui Bone Broth (beef)
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- ½ tsp onion powder
- Salt and pepper to taste
For Serving:
- 2 cups cooked white rice (short or medium grain)
- 2 large eggs
- Chopped green onions or parsley (optional)
- Fried Maui sweet onions (optional)
Instructions
1. Make the Patties
- In a bowl, mix ground beef, minced onion, garlic, egg, breadcrumbs, Worcestershire, salt, and pepper.
- Form into 2–4 patties, depending on preferred size.
- Heat skillet to medium-high and sear patties until golden and cooked to desired doneness (about 4–5 minutes per side).
- Remove patties and set aside. Keep warm.
2. Make the Gravy (Maui Bone Broth Magic)
- In the same pan, melt butter over medium heat.
- Stir in flour to make a roux. Whisk continuously for 2–3 minutes until lightly browned.
- Slowly whisk in the Maui Beef Bone Broth, ensuring no lumps.
- Add soy sauce, Worcestershire, onion powder, salt & pepper.
- Simmer until thickened (about 5–7 minutes), stirring occasionally.
3. Cook the Eggs
- Fry eggs sunny side up or over-easy in butter or oil, leaving yolks runny.
4. Assemble the Loco Moco
- Plate a scoop (or two) of hot rice.
- Top with beef patty.
- Ladle over hot gravy generously.
- Add the fried egg on top.
- Sprinkle with chopped green onions or parsley.

- Grilled pineapple slices for sweetness
- Crispy fried onions or sautéed mushrooms
- Swap beef for venison, turkey, or taro-lentil patty for a local fusion
- Add a dash of chili peppah water or lilikoi hot sauce for kick
